Chinese Donut (Youtiao) Recipe

I have done lots of research and watched many videos of how to make Chinese Donuts (Youtiao) and I’ve finally found a recipe that seems to work for me. This recipe makes smaller donuts, but I think it’s great for someone who’s trying to save oil and those who have smaller pots. Also this recipe requires you to leave the dough overnight in the fridge. Please, do not skip that step, it’s crucial to having a good Chinese donut. I would recommend using a kitchen aid for this recipe, but if you don’t have one it’ll just require you to do more work.

Ingredients:

250g bread flour

160ml water

1/2 tsp salt

1/2 tsp baking soda

1 tsp yeast

1 tbsp oil

  1. In a large bowl, add in flour, salt, baking soda and yeast. Mix the dry ingredients together.
  2. Slowly, add in the water and using a hook attachment turn on the kitchen aid and stir on low for 3 minutes or until the dough is formed.
  3. Add in the tbsp of oil and continue to stir for 3 minutes or until the dough is formed but still able to stretch.
  4. In a large bowl, coat the bowl with oil and place the formed dough onto the bowl. Coat the dough with oil and leave in the fridge overnight. img_1858
  5. The next day, bring out the dough and place some flour onto the counter. Flatten the dough to make a long rectangle shape and start cutting the dough into equal pieces. img_1860
  6. Place one piece on top of another and use a chopstick to put push the pieces together.img_1859
  7. In a medium pot, add in oil and wait for it to heat up. img_1861
  8. Once you’ve made all your donuts, you can place them in the oil to cook. Make sure you constantly turn the donut. It shouldn’t take more the 3-4 minutes to cook.
